Import knowledge: How long?

The our country restaurant market changes every month. Cuisines of unexplored countries, author’s interpretation of familiar dishes, new names on the Olympus of culinary, beloved and reputable chefs – all this is no longer a ghostly dream of romantics, but a very real picture. Sooner or later, before every chef dreaming of knowledge that explodes consciousness, the question arises: “Which school should I go to study?” Below are the five schools. The stated advantages and disadvantages are the subjective opinion of the author.

Fifth place, the title of a waste of money and negative emotions goes to the Le Cordon Bleu school. The minimum informational and practical component. Upon completion of the training, the student will be able to masterfully peel carrots.

From 1-300 euros per week, depending on the course and duration.

Fourth place occupies the last outpost of haute French cuisine – Ecole Ritz Escoffier. Here time has stopped, new inventions that make life easier and save time will not break through here. Only traditional recipes, only Escoffier technologies. A complete lack of flexibility and compliance. The most expensive culinary school in the world, providing knowledge exclusively in French cooking.

Tuition fee is 3 euros for 000 days.

Third Place shared by Italian Food Style Education (IFSE) and the International Culinary School in Tuscany.

IFSE is a converted chateau-school that explores contemporary Italian cuisine and its future. Here they intensively saturate with knowledge – about 8 dishes are worked out per day. Everything is equipped with the latest technology, as reasonable and functional as possible. Students have enough free space in the kitchen so as not to interfere with each other’s work.

Three weeks – 4 euros. The price includes training only.

The culinary school in Tuscany is a preserve of traditional Italian cuisine or, more correctly, the history of Italian cuisine. Students cook according to old recipes, learn the legends associated with each of them. The XNUMXth century villa where the school is located has one kitchen and three apartments where students live. Suitable for those who want to learn the basics of Italian cuisine.

The cost of training is 1 euros. In addition to classes that last a week, the amount includes accommodation and three meals a day.

It is worth clarifying here. Of course, students eat what they cook. But it happens that there is only one practical block and takes place in the evening. Or in the morning. That is why it is important to understand how the student will eat in his free time.

Second place owned by Basque Culinary Center. This is not just a school and not so much a school, it is a laboratory of world gastronomy. This is where food trends and technological solutions are born. Students work in fantastically equipped classrooms. Its International Council includes the best chefs of our time: Heston Blumenthal, Massimo Bottura, Rene Redzepi, Ferran Adria and others. They are the innovative engine of the center, and you can feel it in every detail.

Tuition fees are about 1 euros per week, depending on the course.

Ranking winner – Ferrandi. Here they prepare multi-armed many-legged ones that can immediately start working in any restaurant in the world. The school prepares hard workers who can do everything. Ferrandi provides chefs for most of the restaurants in Paris and participates in almost all culinary events. Of all the schools listed above, only this one is public and not private. The school has very close ties with South Korea and a government contract: teachers are regularly sent to teach in culinary schools. Ferrandi is also the base for many international pastry and culinary competitions.

Tuition fee – 2 euros per week.
